Gluten Free Granola

I made this granola yesterday. Dieter loves it! It's a great alternative if you can't have gluten (wheat,oats,rye,barley).

Granola

1 cup sunflower seeds
1 cup pumpkin seeds
1 cup coconut flakes or shreds
1/2 cup honey
2 tsp cinnamon
Pinch of salt
1/2 Tbs vanilla extract (mine isn't ready yet)
1 cup dried fruit

-Preheat oven to 350°
-Mix all the ingredients, excluding dried fruit.
-Spread on cookie sheet.
-Bake for 20 minutes, stirring every 5 minutes.
-Remove from oven and stir in dried fruit.

This recipe is almost the exact same as my granola recipe. But I do use regular oats. I think that Bobs red mill makes a gluten free oat.

awesome! I've made some GF granola with cashews and cardamom seasoning - but this must grace our breakfast table stat!
